I have a surface pro with a pen for online lessons. In economics and maths, I use an online whiteboard which students have permanent access to, to write notes and solutions to exam questions. My approach is to accelerate students as fast as possible through their given course using exam material to deepen and develop their knowledge. As a way to consolidate knowledge, I offer to set and mark an appropriate homework task for every booked lesson. This is optional, some students prefer to book more lessons!
